We are going back in time to repost this blog about this wonderful Summer Recipe of Tomato Cucumber Salad.  This post from a year ago couldn’t be any more truer as we are tipping well over the 85° mark and seeing a heat index of close to 100!

Summer is here, even though some days it has been more like Spring with cooler temperatures and lots of rain, but it still is. Then there are those other days that Summer is in full bloom and temps tip over the 85° mark. Here is recipe that is great for Summertime. Enjoy!

Tomato Cucumber Salad

• ¼ cup mayonnaise
• 3 tablespoons white vinegar
• 1 green onion chopped
• 1 clove garlic pressed
• 1 teaspoon sugar
• ¼ teaspoon salt
• 1 teaspoon Bavarian Inn Supreme Pasta and Salad Seasoning
• 1 teaspoon Worcestershire sauce
• ½ teaspoon hot sauce
• 1/3 cup vegetable oil
• ¾ cup chopped fresh parsley
• leaf lettuce
• 3 medium tomatoes, thinly sliced
• 2 cucumbers, thinly sliced

Combine first 9 ingredients in container of an electric blender. Processuntil smooth, stopping once to scrape down sides. With blender on high gradually add oil in a slow, steady stream. Stir in parsley. Cover dressing and chill. Arrange lettuce on chilled salad plates; top with tomato and cucumber slices. Drizzle with dressing; refrigerate remainder in a separate container.

Yield 6 to 8 servings.
